Aronia (Aronia melanocarpa), also known as chokeberry, is a small black or purplish berry native to North America, though it is now cultivated across Eastern Europe and Scandinavia.
Its profile is remarkable both nutritionally and technologically:
Exceptionally rich in polyphenols, especially anthocyanins and proanthocyanidins, even higher than those found in blueberry or pomegranate.
Its taste is very astringent and slightly bitter, which is why it is almost always used in processed form (juices, concentrates, powders, or extracts).
In the food industry, it is valued for its deep natural color (dark red-purple) and its antioxidant activity, used in functional drinks, nutraceuticals, bakery, and blends with other fruits such as blueberry, apple, or grape.
From a technical standpoint, aronia concentrate typically has 60–65 °Brix, 1–2 % acidity (as citric acid), and a pH between 3.0 and 3.5. It performs well in acidic matrices and withstands pasteurization without significant color loss.
In beverage applications, aronia is mainly used for three purposes: color, functionality, and sensory balance.
Provides a wine-red to deep violet tone that remains stable in acidic systems. Commonly used to adjust color in blends with lighter fruits (apple, pomegranate, blueberry, grape).
In clean-label formulations, it replaces synthetic colorants such as E163.
Used in functional beverages, detox shots, and anti-aging formulations, alone or combined with green tea extracts, collagen, or pomegranate.
On its own, aronia is astringent and slightly bitter, but in blends it adds body and persistence. Serves as a base note to enhance texture and depth in red-fruit, grape, or pomegranate beverages, and improves the profile of light-colored NFC juices.
