On many occasions, in industry we need to use natural sugars from different fruits, since a clarified product gives us color in the products and we need a clear product, without fruit smell or color.
In these cases, a deionized product is used, which can come from various sources, and each of them has a different use.
During the deionization process, the ions present in the fruit water are eliminated or reduced. Natural fruit water contains minerals and ions that can affect the taste and quality of the final product, especially in the production of fruit juices and concentrates. Deionizing is generally done using water purification technologies, such as reverse osmosis.
Reverse osmosis is a process in which water is forced through a semi-permeable membrane to remove impurities, minerals and unwanted ions. This process helps obtain deionized water, which can then be used in the production of fruit juices to maintain a purer flavor and prevent the formation of unwanted sediment or crystals.
Fruit deionization can also refer to the process of removing ions from certain compounds present in fruit to improve the quality of certain products, such as jellies or jams. In this case, ion exchange resins or other methods can be used to remove or reduce the concentration of specific ions.
These deionized products are usually packaged in 265 kg aseptic drums with a shelf life of approximately one year.
